I’m non-mechanical …. is that coolant change procedure in the first video how my local shop would do it? (ie with the third radiator). Seems very involved to me.

We don';t have the 3rd radiator. That's on his trike.

I liked that he didn't have to remove the plastic to get to the radiator cap.

If you've not read the whole procedure in the shop manual it's an eye opener.
